Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Roll out pizza dough on a lightly floured surface and cut into 8 rectangles or squares.

Add fillings to one side of each dough piece: Spread 1 tbsp of pizza sauce, add a generous sprinkle of mozzarella and any other toppings. Sprinkle with a bit of Parmesan and Italian seasoning.

Fold dough over to form a pocket and crimp the edges with a fork to seal.

Brush tops with olive oil or butter. Sprinkle with a little extra seasoning or cheese if desired.

Bake for 15–18 minutes, or until golden brown and crisp.

Let cool for a few minutes before serving. Serve with extra pizza sauce for dipping!
