Combine salt, paprika, garlic powder, chili powder, onion powder, and cayenne pepper (if using) in a small bowl. Set aside for sprinkling over your hot fries later.

Heat at least 3 inches of vegetable oil in a deep saucepan to 350°F (180°C). Carefully fry your frozen fries for 6-8 minutes until they're golden and crispy. Transfer to paper towels to drain excess oil.

While the fries cool slightly, tear your American cheese slices into smaller pieces and place in a microwave-safe bowl with milk and jalapeño brine. Microwave in 30-second bursts, stirring between each, until you have a smooth, melted cheese sauce.

Toss your hot fries in a large bowl with the seasoning mixture until well coated. Serve immediately with the warm cheese sauce on the side for dipping.
