# Ingredients:

01 - 1 pound Ore-Ida Extra Crispy Frozen Fast Food Fries
02 - Vegetable oil for deep frying

→ Seasoning Mix

03 - 2 teaspoons salt
04 - 2 tablespoons paprika
05 - 1 teaspoon garlic powder
06 - 2 teaspoons chili powder
07 - 1 teaspoon onion powder
08 - 1/4 teaspoon cayenne pepper (optional)

→ Cheese Sauce

09 - 16 slices American cheese
10 - 1/4 cup milk
11 - 1 tablespoon jalapeño brine (from jarred jalapeños)

# Instructions:

01 - Combine salt, paprika, garlic powder, chili powder, onion powder, and cayenne pepper (if using) in a small bowl. Set aside for sprinkling over your hot fries later.
02 - Heat at least 3 inches of vegetable oil in a deep saucepan to 350°F (180°C). Carefully fry your frozen fries for 6-8 minutes until they're golden and crispy. Transfer to paper towels to drain excess oil.
03 - While the fries cool slightly, tear your American cheese slices into smaller pieces and place in a microwave-safe bowl with milk and jalapeño brine. Microwave in 30-second bursts, stirring between each, until you have a smooth, melted cheese sauce.
04 - Toss your hot fries in a large bowl with the seasoning mixture until well coated. Serve immediately with the warm cheese sauce on the side for dipping.
